   Same ‘ole same ‘ole.

   Enchiladas: Corn tortillas soaked in enchilada sauce to make them soft, filled with your choice of meat, cheese, etc. Top with more enchilada sauce and/or chile con carne, diced onions, sour cream, or avocado.

   Tacos: Corn or flour tortillas, filled with meat of your choice, shredded lettuce, diced tomato and onion, topped with a little shredded cheese and taco sauce (roja o verde).

   Chiles Rellenos: Poblano pepper stuffed with meat, rolled in corn meal and deep fried.

   Huevos Rancheros: Eggs to order, covered with chile sauce.

   Menudo (tripe soup) Not for the faint of heart. Tripe stewed with chiles, spices, and onions. A great breakfast after a night out drinking cerveza.

   Fajita: A thin, tenderized skirt steak served to order, with a salad.

   Chile con carne: Stewed chiles and tomatoes with peppers, onions, and spices, and diced or ground meat.

   Pollo al Mole: Roasted or sauteed chicken in a spicy chocolate sauce.

   A lot of the above is crossover to TexMex, but it’s familiar to US diners. Mexicanos are also Norteamericanos, by the way.

   Be inventive. There are many dishes in our society that have Spanish or Mexican origins.

   You do realize that most "Mexican" restaurants serve a sort of Tex-Mex, right? and that they are in English for the gringos who cannot read Spanish? This is going to take a while. Better get started soon! Go to the suggested web sites, but keep your menu limited and small or you will be there for weeks. Our taco houses in San Antonio, Texas have breakfast plates and lunch plates and tacos. Maybe a few of each of those, plus drinks would be all you need.
